Batch cooking is the art of cooking extra when you are already making a portion, and freezing it for later use. If you are browning meat, go ahead and brown an extra pound or two, and save for later in the week, or freeze for next week. Then, half your work is done!
Something that I like to cook a huge batch of and save or freeze is Breakfast Burrito filling.
Ingredients:
1 dozen eggs
sausage crumbled ( I use the Jimmy Dean turkey sausage crumbles)
Diced potatoes (or you can grab a bag of the frozen chopped hash browns)
*optional* diced onions, and peppers (the bag of frozen hash browns often has these mixed in already)
Scramble the eggs in a pan.
In a seperate pan brown the potato hash browns and the sausage.
Mix together and add salt to taste.
The morning of, wrap in a tortilla shell and serve!
TIPS:
If frozen, you do not need to thaw, simply heat in microwave.
You can add a bit of salsa if needed in your tortilla wrap
No tortillas? Simply eat out of a bowl!
