<p>WIC items needed:<br />
Fresh Spinach Leaves<br />
(Washed and patted dry)</p>
<p>Non WIC items:<br />
2 tbs oil<br />
Garlic (if using a whole clove slice it)</p>
<p>1. Heat oil over medium in pan</p>
<p>2. Add in Garlic and saute for 1-2 minutes</p>
<p>3. Reduce heat to low and add in spinach leaves. Cook for about 2-3 minutes flipping and stirring the spinach often until wilted through.</p>
<p>&#8211; The Spinach will cook down, so add more than you think&#8211;</p>

<p>For this recipe you will need:</p>
<p><strong>3 chicken breasts halved</strong> (I&#8217;m talking about making it thinner, not cutting it in half length wise) and cut into 1 inch pieces<br />
<strong>Broccoli<br />
Mushrooms<br />
Cheese </strong>(I use 3 slices of white American)<br />
<strong>Balsamic Vinegar</strong><br />
*Any complimentary Vegetables you would like to add</p>
<p>1. Heat your skillet and Balsamic Vinegar until bubbly</p>

<p>3. Add in your vegetables</p>
<p>4. Cook until Chicken is cooked throughout and vegetables are fork tender</p>
<p>5. Take off heat, melt cheese on top</p>
<p>6. Enjoy.</p>
<p>You can see how incredibly easy this is. It tastes good too, and my kids love this. I tend to always use broccoli and whatever vegetables I have on hand. Onions, mushrooms, peppers, cauliflower&#8230;etc</p>

<p>My kids love apples with peanut butter, so I knew this would be a win! It is so simple and would be great for a school party (unless you have peanut butter allergies, then find a substitute like honey?)</p>

<p>Simply slice your apple, I used my <a href="http://www.amazon.com/gp/product/B0000VLYZY/ref=as_li_ss_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000VLYZY&amp;linkCode=as2&amp;tag=thrtipfrotif-20">handy slicer/corer </a>that I LOVE. Then I sliced each wedge in half to make them a bit thinner so they would not be too heavy and weigh down on the marshmallows.</p>
<p>Spread a little peanut butter on 1 side of each wedge. Then sandwich your marshmallows in between 2 slices with the peels facing out for lips!</p>

<p>This week&#8217;s WIC recipe is a great side dish for a cook out! Very healthy, light, and easy!</p>
<p>I found the original recipe in an issue of Paula Deen Magazine, but decided to tweak it a bit to what I had on hand.  That is the wonders of recipes, make them to what you already have on hand.</p>
<p>Paula&#8217;s recipe called for the following cans of beans:<br />
Kidney, Garbonzo, Green, Yellow Wax, Black</p>

<p>Here is how I made my salad:</p>
<p>1 can of each drained:<br />
<strong>Green Beans<br />
Yellow Wax<br />
Black Beans<br />
Pimentos</strong></p>
<p>I simply added them all to a bowl, and tossed in a Vinaigrette dressing.</p>
<p>*Tip &#8211; if you are not down with eating chilled beans, try heating it up a bit, sprinkle with some cheese, and spread over a tortilla*</p>
