Last night was one of those, I’m going to be gone in the evening, need to get supper cooked in a hurry and using what I already have on hand nights. I simply turned to Tator Tot Casserole. Is it the healthiest meal? No. Why did I cook it? Becuase I had sour cream going bad and it is my pet peeve to throw out food I let go to waste.

Here is what you’ll need for this yummy Tator Tot Casserole:

1 lb ground Turkey ( or beef)
1/2 onion chopped
8oz sour cream
1 can cream of mushroom soup
shredded cheese ( as much as you want)
velveeta cheese

1. Brown meat and onion together
2. Add soup and sour cream, bring to a boil, reduce heat and stir in shredded cheese.
3. Spray 9×13 pan with non stick Pam and pour in meat mixture

4. Add a few chunks of Velveeta on top just randomly ( you just want this to melt and ooze through the tator tots on top)
5. Top with frozen Tator Tots.

Cover pan with foil, and cook as Tator Tots direct.

I am telling you, this sour cream, cheesy ooziness with tator tots is amazing.

Happy Valentine’s Day!   For Valentine’s Day, I usually buy the kids a small gift…(very small)  but as far as my husband and I, we do not really do much for the Holiday. He use to be notorious for bringing me home flowers….on a regular basis, but I politely told him to stop.
* ok, I can feel most of your eyes burning through me right now, but I just feel it is a waste of money doing it all the time. I would rather him just snuggle up and watch a movie on the couch with me*

But, we do like to have fun at our school parties for Valentines! The kids get all into making bags for their cards, and making their cards to hand out. This year we went with a personal approach.

I am sure many of you have seen these lollipop/sucker cards. Take a picture of your child extending their arm, print it, cut a small hole and poke the sucker stick through. Voila! It looks like they are holding the cards. ( I used a small drill bit to poke my holes)

But, the boys wanted something different….so we ended up with this.
