Pumpkin Chocolate Chip Muffins

Fall means baking in my house. Something about this time of year makes me wanna bake special treats. Especially these muffins!

Truthfully, I do not really like anything Pumpkin flavored. However, these Pumpkin Chocolate Chip Muffins are my guilty pleasure. Wherever I take them, people rant about them. They are so moist, and I think the Chocolate is what makes the muffin *wink wink*

Pumpkin Chocolate Chip Muffins

Ingredients:
4 eggs
2cups Sugar
1 can (15oz) Pumpkin
1 tsp Vanilla extract
12oz Semi-Sweet Chocolate Chips
1 1/4 Cup Vegetable Oil
3 cups Flour
2tsp Baking Soda
2tsp Baking Powder
2tsp Cinnamon
1tsp Salt

1. Mix Eggs, Sugar, Pumpkin & Vanilla

2. Mix in the rest of the ingredients except chocolate chips

3. Fold in Chocolate Chips

4. Bake 400 for about 15 minutes or until done. (if making mini sized muffins, cook about 12 minutes)

* Optional, Garnish with powdered Sugar for a colorful touch*

Do not be overwhelmed by the long list of ingredients. I promise they are easy and so good.

Y’all – this batch makes a lot of muffins. I usually make 1 pan of mini for the kids, and freeze the rest. They freeze beautifully, and you simply take them straight from freezer to microwave for a warm, yummy treat in the mornings!
