These are delish! Very easy, and healthy.
WIC Items Needed:
1 Zucchini Squash
1 cup cheddar cheese (shredded)
1 egg
1/4 onion diced
Other Items Needed:
1 cup Bread Crumbs
Muffin Pan (mini works best)
Salt & pepper to taste
1. Grate Zucchini and squeeze out excess water with towel
2. In bowl mix: egg, bread crumbs, Zucchini, cheese, onion (salt & pepper if you wish)
3. Spoon mixture into mini muffin pan
4. Bake at 400 for about 15 minutes, or until cheese is melted and cup starts to form & brown & bubble.
Let cool & Serve. BYE BYE Tator Tots!

Great recipe! I made it low carb by replacing the flour with a blend of flax meal, soy flour, and a bit of coconut flour. Oh, yummy!!
